High Peaks Distilling, founded by John Carr in 2016, emerged from decades of brewing experience at Adirondack Brewery and expertise in malt fermentation. Alongside Head Distiller Aaron Koch, the distillery aims to create world-class and innovative whiskey, bourbon, gin, and ready-to-drink cocktails in the heart of the Adirondacks. After several trips to Scotland’s renowned whiskey regions, John Carr was inspired to replicate traditional copper pot stills. He collaborated with JBF Stainless in Utica, New York, to create a tall, slender still that enhances interaction with copper, producing a clean, light spirit. At High Peaks, all mash is brewed and fermented at Adirondack Brewery under the supervision of Carr and Head Distiller Aaron Koch. The whiskeys are aged for a minimum of two years, allowing the spirit and barrel to develop a quality that is ready for sharing.
